Menu Plan Monday 6/15
Wow!! It has been a month since I posted. I really need to get back into the swing of things. We have a super busy week this week. Not only do we have VBS going on at our church, but Will has started swimming lessons, and Marc has his busiest week of the year (where he will be working Late!! Tuesday-Friday). That being said I will be alone with the kids most of the week, and plan on making dinners simple. And If I happen to stray from my plan this will not be the week that I beat myself up over it.
After our busy week we plan on having a nice day together on Saturday as a family and celebrate Fathers Day with Marc, because he is flying out early Sunday morning for Kansas City.
So here goes.
- Pulled Pork Sandwiches
- Black Beans and Rice
- Homemade Pizza
- Eggs and Turkey Bacon
- Barbecued Ribs, Sweet Corn, Corn Bread, and Cole Slaw (this will be our Fathers Day meal on Saturday)
I am including a recipe here for the pulled pork, it is so easy and tastes great. I have had this cooking in the crockpot all day and the house smells wonderful:
PULLED PORK SANDWICHES
Pork loin (About 3 pounds)
1/2 c. water
4 T. vinegar (I used cider vinegar but white would do)
2 t. Worcestershire
1 clove garlic minced
2 t. chili powder
3 T. BBQ sauce
BBQ sauce
Sandwich buns
Coleslaw
Pickles, dill slices
Put all in crockpot. Cover, cook on low heat for 8-10 hours, high heat for 5 hours.
Remove meat from the pot. Keep 2 T. of the liquid in the pot and throw away the rest. Use 2 forks to shred the meat into pieces appropriate for sandwiches. Put the meat back in the crockpot. Add as much BBQ sauce as needed to slightly coat the meat. Stir, cover and cook low for 30 minutes.

I am going to try and keep things easy this week. We have a busy week with school and getting stuff done around the house. We are also starting to plan for a special little boys birthday party!!!!

We are keeping it simple around here this week. I have a sick baby and am getting ready for a garage sale at the end of the week (praying for good weather). Last night we had scrambled eggs and sausage. Tonight I am planning on Tacos. The rest of the week we will be winging it. I have to go set up at my girlfriends for the garage sale tomorrow. The garage sale is happening on Thursday night and all day friday. So we will see how the week goes.

It is that time again. Why do I hate this job so much? We followed our menu pretty well last week. We did go out on Friday, which we need to stop doing, it is not helping the budget. I made this Barbeque Chicken Pizza and it was wonderful. I was very skeptical about mixing barbeque sauce with marinara sauce but it really was tasty.
Now on to this weeks menu
- Ranch Chicken Thighs (I am going to use boneless skinless breasts)
- Homemade Pizza (this is becoming a regular, and we are still trying to tweak the crust recipe to get just the right flavor)
- Smoked Sausage, Potatoes on the Grill, Veggie
- Hamburgers on the Grill
I am very happy that it is grilling season. We use our grill alot in the summer.

Sorry, I missed last week. I was not organized at all last week. I will do better this week. I am actually kind of excited about this week. I have some new recipes to try- we’ll see how they go.
- Steak, baked potatoes, vegetable
- 40 clove garlic chicken, mashed potatoes, vegetable
- Macaroni and cheese, salad, fruit
- Barbeque chicken pizza (I am not exactly sure how I am going to do this one yet, or how it will go over- I have some pizza purists in the house)
That is all I have for now. I work Thursday nights- so this should get us through the week with the exception of Saturday night- I’ll have to think on that one a little bit.

Ok, so I am a day late. We didn’t follow our menu very well at all last week. It was a weird week, there were nights I was gone and a night we ended up going out. So I am going to reuse some of last weeks menu.
- Spaghetti and homemade bread
- Smoked sausage and Fried potatoes
- Chicken pot pie
- Homemade Pizza

It’s monday again, time to plan the menu for the week. I am very proud that we actually stuck to our menu last week. A couple of the nights were new recipes. The french onion soup was a new recipe- We didn’t really care for the recipe. Marc is the one who really likes French Onion Soup, he thought it was OK, I would have preferred a more “beefy” broth. The Turkey Taco bake however was very good. Will didn’t like it, but Marc and I did. It was kind of like a big layered taco dip, YUM.
So, on to this week:

One of my New Years Resolutions this year was to menu plan, and I have been doing a terrible job of it so far. I started this blog so that I would be able to take part in Menu Plan Monday and hopefully stay accountable that way. I love to cook, but have struggled, probably since my daughter was born, to come up with meals to cook. I have enjoyed following some of the other blogs out there and getting ideas and recipes. So here goes, here is my first attempt at Menu Plan Monday. We will see how I will do, I am not anticipating that my blog will get a lot of traffic- I really don’t know at this point what else I will be posting here. I am going to just see where this takes me…
Breakfast:
- Oatmeal
- Yogurt with Kashi Cereal
- Toast with Peanut Butter
- Waffles
- Bannanas/Apples
